7 Common Cooking Mistakes (And How to Fix Them)
Every home cook has been there — the pasta clumps together, the pan sticks, the sauce breaks. Most kitchen mistakes come down to a handful of habits, and once you spot them, they’re easy to fix.
1. Crowding the Pan
Too much food in the pan traps steam and stops browning. Cook in batches if you need to — you’ll get a better sear and better flavor.
2. Not Salting Pasta Water
This is your one chance to season the pasta itself, not just the sauce on top. The water should taste like the sea.
3. Cooking Straight From the Fridge
Cold meat hitting a hot pan cooks unevenly. Let proteins sit out for 15–20 minutes before cooking so the centre and the outside finish closer to the same time.
4. Flipping Too Early
If food is sticking when you try to turn it, it usually isn’t ready. A proper sear releases from the pan on its own.
5. Not Tasting As You Go
Recipes are a starting point. Taste at each stage and adjust salt, acid, or heat before you get to the end — it’s much easier to fix a dish halfway through than after it’s plated.
6. Skipping the Resting Step
Cutting into meat straight off the heat lets all the juices run out onto the board. A five to ten minute rest keeps it inside the meat instead.
7. Ignoring Recipe Prep Steps
“Mise en place” — having everything measured and chopped before you start cooking — isn’t fussy, it’s what keeps a fast-moving recipe from turning into a scramble halfway through.
